Description
A classic Ambrosia Fruit Salad perfect for potlucks and gatherings. This refreshing dessert features a mix of tropical fruits, marshmallows, and coconut in a creamy dressing.
Ingredients
Scale
- 1 (20 ounce) can pineapple chunks, drained
- 1 (15 ounce) can mandarin oranges, drained
- 2 cups miniature marshmallows
- 1 cup shredded coconut
- 1 cup sour cream or plain Greek yogurt
- 1/4 cup powdered sugar (optional, adjust to taste)
- 1/2 teaspoon vanilla extract
Instructions
- In a large bowl, combine the drained pineapple chunks and mandarin oranges.
- Add the miniature marshmallows and shredded coconut to the bowl with the fruit. Gently mix to combine.
- In a separate small bowl, whisk together the sour cream (or Greek yogurt), powdered sugar (if using), and vanilla extract until smooth.
- Pour the dressing over the fruit mixture. Gently fold everything together until the fruit, marshmallows, and coconut are evenly coated in the dressing.
- Cover the bowl and refrigerate the Ambrosia Fruit Salad for at least 1 hour before serving to allow the flavors to meld. For best results, chill for several hours.
- Before serving, give the salad a gentle stir. Serve cold.
Notes
- You can customize this salad by adding other fruits like grapes, bananas, or maraschino cherries.
- For a lighter version, use light sour cream or Greek yogurt.
- Adjust the amount of powdered sugar based on how sweet you prefer your salad.
- Toasting the coconut before adding it can add another layer of flavor.
