Description
Delicious vegan BBQ pulled ‘pork’ sandwiches made with jackfruit.
Ingredients
Scale
- 2 cans (20 oz each) young green jackfruit in brine, drained and rinsed
- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup your favorite BBQ sauce
- 1/4 cup vegetable broth
- 2 tbsp apple cider vinegar
- 1 tbsp brown sugar
- 1 tsp smoked paprika
- 1/2 tsp chili powder
- Salt and black pepper to taste
- 4-6 burger buns
- Optional toppings: coleslaw, pickles, red onion slices
Instructions
- Drain and rinse the jackfruit thoroughly. Use your hands to shred the jackfruit, removing any hard core pieces.
- Heat olive oil in a large skillet or pot over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the shredded jackfruit, BBQ sauce, vegetable broth, apple cider vinegar, brown sugar, smoked paprika, and chili powder.
- Bring the mixture to a simmer, then reduce heat to low, cover, and let it cook for at least 20-30 minutes, stirring occasionally, until the jackfruit is tender and the sauce has thickened. For a deeper flavor, you can simmer for up to an hour.
- Season with salt and black pepper to taste.
- Toast the burger buns, if desired.
- Spoon the BBQ jackfruit onto the toasted buns. Add your favorite toppings.
- Serve immediately.
Notes
- Make sure to use young green jackfruit in brine, not ripe jackfruit in syrup.
- For extra smoky flavor, you can add a dash of liquid smoke.
- This recipe can be made ahead of time and reheated.
