Delicious vegan BBQ pulled ‘pork’ sandwiches made with jackfruit.


Ingredients

  • 2 cans (20 oz each) young green jackfruit in brine, drained and rinsed
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup your favorite BBQ sauce
  • 1/4 cup vegetable broth
  • 2 tbsp apple cider vinegar
  • 1 tbsp brown sugar
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • Salt and black pepper to taste
  • 4-6 burger buns
  • Optional toppings: coleslaw, pickles, red onion slices


Instructions

  1. Drain and rinse the jackfruit thoroughly. Use your hands to shred the jackfruit, removing any hard core pieces.
  2. Heat olive oil in a large skillet or pot over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Stir in the shredded jackfruit, BBQ sauce, vegetable broth, apple cider vinegar, brown sugar, smoked paprika, and chili powder.
  5. Bring the mixture to a simmer, then reduce heat to low, cover, and let it cook for at least 20-30 minutes, stirring occasionally, until the jackfruit is tender and the sauce has thickened. For a deeper flavor, you can simmer for up to an hour.
  6. Season with salt and black pepper to taste.
  7. Toast the burger buns, if desired.
  8. Spoon the BBQ jackfruit onto the toasted buns. Add your favorite toppings.
  9. Serve immediately.

Notes

  • Make sure to use young green jackfruit in brine, not ripe jackfruit in syrup.
  • For extra smoky flavor, you can add a dash of liquid smoke.
  • This recipe can be made ahead of time and reheated.
