Easy Cajun shrimp boil foil packets perfect for a summer cookout.
Ingredients

- 1 pound large shrimp peeled and deveined
- 1 pound smoked sausage sliced into 1/2 inch rounds
- 2 ears of corn cut into 3-4 pieces each
- 1 pound baby potatoes halved or quartered
- 4 tablespoons olive oil
- 2 tablespoons Cajun seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper optional for extra heat
- Salt and black pepper to taste
- Lemon wedges for serving
- Fresh parsley chopped for garnish
Instructions
- Preheat your grill or oven to medium-high heat (around 400°F or 200°C).
- In a large bowl combine the shrimp sausage corn and potatoes.
- In a small bowl whisk together the olive oil Cajun seasoning garlic powder onion powder and cayenne pepper (if using).
- Pour the seasoning mixture over the shrimp and vegetable mixture and toss to coat everything evenly. Season with salt and pepper to taste.
- Tear off four large pieces of heavy-duty aluminum foil. Divide the mixture evenly among the foil pieces.
- Bring the edges of each foil packet together and fold them tightly to seal creating a secure packet.
- Place the foil packets on the preheated grill or a baking sheet in the oven.
- Cook for 15-20 minutes or until the shrimp are pink and cooked through the sausage is heated and the potatoes and corn are tender. Cooking time may vary depending on your grill or oven.
- Carefully open the foil packets (watch out for steam!).
- Serve immediately with lemon wedges and a sprinkle of fresh parsley.
Notes
- You can customize the vegetables in these packets. Try adding bell peppers onions or broccoli.
- Adjust the amount of cayenne pepper to your preferred level of spice.
- For easier cleanup use heavy-duty aluminum foil.
- If using a grill place the packets over indirect heat if possible to prevent burning.
