- 8 ounces egg noodles
- 2 tablespoons unsalted butter
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup frozen peas
- 1 (10.5 ounce) can condensed cream of mushroom soup
- 1/2 cup milk
- 2 (5 ounce) cans tuna, drained and flaked
- 1 cup shredded cheddar cheese, plus more for topping
- 1/2 cup panko breadcrumbs
- 2 tablespoons melted butter
- Salt and black pepper to taste
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
- Cook the egg noodles according to package directions. Drain and set aside.
- While the noodles cook, melt 2 tablespoons of butter in a large skillet over medium heat. Add the chopped onion and celery. Cook until softened, about 5-7 minutes.
- Stir in the frozen peas, condensed cream of mushroom soup, and milk. Cook for 2-3 minutes, stirring constantly, until the mixture is smooth and heated through.
- Remove the skillet from the heat. Gently fold in the drained tuna, cooked egg noodles, and 1 cup of shredded cheddar cheese. Season with salt and black pepper to taste.
- Pour the mixture into the prepared baking dish, spreading it evenly.
- In a small bowl, combine the panko breadcrumbs and 2 tablespoons of melted butter. Sprinkle this mixture evenly over the casserole. If desired, sprinkle a little extra shredded cheddar cheese over the breadcrumbs.
- Bake for 20-25 minutes, or until the casserole is bubbly and the topping is golden brown and crispy.
- Let the casserole rest for a few minutes before serving.
