A classic hearty Cobb salad perfect for a summer meal.
Ingredients

- 6 cups chopped romaine lettuce
- 2 cups chopped cooked chicken or turkey
- 8 slices cooked bacon, crumbled
- 2 hard-boiled eggs, chopped
- 1 cup chopped tomatoes
- 1/2 cup crumbled blue cheese
- 1 avocado, diced
- 1/4 cup chopped chives
- For the dressing:
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Arrange the chopped romaine lettuce on a large platter or in individual bowls.
- Arrange the chicken, bacon, eggs, tomatoes, blue cheese, avocado, and chives in rows over the lettuce.
- In a small bowl, whisk together the red wine vinegar, olive oil, Dijon mustard, salt, and pepper.
- Drizzle the dressing over the salad just before serving.
- Serve immediately.
Notes
- You can substitute any cooked protein you like for the chicken or turkey.
- Feel free to add other vegetables like corn, cucumber, or red onion.
- Adjust the amount of blue cheese to your liking.
- Make the dressing ahead of time and store it in the refrigerator.
