A classic hearty Cobb salad perfect for a summer meal.


Ingredients

  • 6 cups chopped romaine lettuce
  • 2 cups chopped cooked chicken or turkey
  • 8 slices cooked bacon, crumbled
  • 2 hard-boiled eggs, chopped
  • 1 cup chopped tomatoes
  • 1/2 cup crumbled blue cheese
  • 1 avocado, diced
  • 1/4 cup chopped chives
  • For the dressing:
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Arrange the chopped romaine lettuce on a large platter or in individual bowls.
  2. Arrange the chicken, bacon, eggs, tomatoes, blue cheese, avocado, and chives in rows over the lettuce.
  3. In a small bowl, whisk together the red wine vinegar, olive oil, Dijon mustard, salt, and pepper.
  4. Drizzle the dressing over the salad just before serving.
  5. Serve immediately.

Notes

  • You can substitute any cooked protein you like for the chicken or turkey.
  • Feel free to add other vegetables like corn, cucumber, or red onion.
