Ingredients

  • 1 cucumber, peeled and roughly chopped
  • 1 green bell pepper, seeded and roughly chopped
  • 1/2 red onion, roughly chopped
  • 2 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • Salt and black pepper to taste
  • Optional garnishes: chopped cucumber, bell pepper, red onion, croutons, fresh herbs


Instructions

  1. Combine the chopped tomatoes, cucumber, green bell pepper, red onion, and garlic in a large bowl.
  2. Add the olive oil and red wine vinegar to the bowl.
  3. Season with salt and pepper to taste.
  4. Using an immersion blender or a regular blender, blend the mixture until smooth. For a chunkier gazpacho, blend for a shorter time or pulse.
  5. Taste and adjust seasoning as needed.
  6. Cover and refrigerate for at least 2 hours to allow the flavors to meld and the soup to chill thoroughly.
  7. Serve chilled, garnished with your favorite toppings.
