- 6 ripe tomatoes, roughly chopped
- 1 cucumber, peeled and roughly chopped
- 1 green bell pepper, seeded and roughly chopped
- 1/2 red onion, roughly chopped
- 2 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- Salt and black pepper to taste
- Optional garnishes: chopped cucumber, bell pepper, red onion, croutons, fresh herbs
Instructions
- Combine the chopped tomatoes, cucumber, green bell pepper, red onion, and garlic in a large bowl.
- Add the olive oil and red wine vinegar to the bowl.
- Season with salt and pepper to taste.
- Using an immersion blender or a regular blender, blend the mixture until smooth. For a chunkier gazpacho, blend for a shorter time or pulse.
- Taste and adjust seasoning as needed.
- Cover and refrigerate for at least 2 hours to allow the flavors to meld and the soup to chill thoroughly.
- Serve chilled, garnished with your favorite toppings.
Notes
- For a smoother texture, you can strain the gazpacho after blending.
- Adjust the amount of garlic, vinegar, and oil to your preference.
