  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup olive oil
  • 1/4 cup lime juice
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and black pepper to taste


Instructions

  1. In a large bowl, combine the black beans, corn, red bell pepper, green bell pepper, red onion, and cilantro.
  2. In a small bowl, whisk together the olive oil, lime juice, cumin, and chili powder.
  3. Pour the dressing over the bean and corn mixture.
  4. Stir gently to combine all ingredients.
  5. Season with salt and pepper to taste.
  6. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  7. Serve chilled with tortilla chips or as a side dish.
