Ingredients

- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can whole kernel corn, drained
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/2 red onion, finely chopped
- 1/2 cup chopped fresh cilantro
- 1/4 cup olive oil
- 1/4 cup lime juice
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt and black pepper to taste
Instructions
- In a large bowl, combine the black beans, corn, red bell pepper, green bell pepper, red onion, and cilantro.
- In a small bowl, whisk together the olive oil, lime juice, cumin, and chili powder.
- Pour the dressing over the bean and corn mixture.
- Stir gently to combine all ingredients.
- Season with salt and pepper to taste.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled with tortilla chips or as a side dish.
Notes
- For a spicier salsa, add a diced jalapeño pepper.
- You can add other ingredients like diced avocado or chopped tomato.
- This salsa is best served cold.
