Description
These crispy zucchini fritters with feta are a healthy and delicious appetizer.
Ingredients

- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1/4 cup crumbled feta cheese
- 2 large eggs, lightly beaten
- 2 tablespoons chopped fresh dill
- 2 tablespoons chopped fresh parsley
- 1/4 teaspoon black pepper
- 2-3 tablespoons olive oil, for frying
Instructions
- Grate the zucchinis and place them in a colander. Sprinkle with salt and let sit for 10-15 minutes to drain excess water. Squeeze out as much liquid as possible using your hands or a clean kitchen towel.
- In a medium bowl, combine the squeezed zucchini, flour, Parmesan cheese, feta cheese, eggs, dill, parsley, and black pepper. Mix until well combined.
- Heat olive oil in a large non-stick skillet over medium heat.
- Spoon 2-3 tablespoons of the zucchini mixture for each fritter into the hot skillet, flattening slightly with the back of a spoon. Do not overcrowd the pan.
- Cook for 3-4 minutes per side, or until golden brown and crispy.
- Remove fritters from the skillet and place on a plate lined with paper towels to drain excess oil.
- Serve warm with your favorite dipping sauce, such as Greek yogurt or tzatziki.
Notes
- Ensure you squeeze out as much water as possible from the zucchini to prevent soggy fritters.
- Adjust the amount of herbs to your preference.
