- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1 teaspoon baking soda
- pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or grease generously.
- In a large bowl, mash the ripe bananas with a fork until smooth.
- Stir the melted butter into the mashed bananas.
- Mix in the baking soda and salt.
- Add the sugar, beaten egg, and vanilla extract; stir to combine.
- Gradually add the flour, mixing until just combined. Do not overmix.
- Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
- Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
- Using very ripe bananas gives the best flavor and sweetness.
- Do not overmix the batter after adding the flour; this can result in tough muffins.
- Muffins are best enjoyed fresh, but can be stored in an airtight container at room temperature for up to 3 days.
