  • 1 large egg, beaten

  • 1 1/2 cups all-purpose flour


Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or grease generously.
  2. In a large bowl, mash the ripe bananas with a fork until smooth.
  3. Stir the melted butter into the mashed bananas.
  4. Mix in the baking soda and salt.
  5. Add the sugar, beaten egg, and vanilla extract; stir to combine.
  6. Gradually add the flour, mixing until just combined. Do not overmix.
  7. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  8. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
