Description

This easy peach galette is a free-form tart, showcasing ripe peaches in a rustic and delicious dessert. It’s simple to make, perfect for any skill level, and offers a beautiful presentation with minimal effort.

  • 1 recipe pie crust (homemade or store-bought)
  • 4-5 ripe peaches, peeled, pitted, and sliced
  • 1/4 cup granulated sugar, plus extra for sprinkling
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon vanilla extract
  • Pinch of ground cinnamon (optional)
  • 1 tablespoon unsalted butter, cut into small pieces
  • 1 egg, beaten (for egg wash)


Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. On a lightly floured surface, roll out the pie crust into a rough 12-inch circle. Transfer the dough to the prepared baking sheet.
  3. In a large bowl, gently toss the sliced peaches with 1/4 cup sugar, flour, vanilla extract, and cinnamon (if using).
  4. Arrange the peach mixture in the center of the rolled-out dough, leaving a 2-inch border around the edges.
  5. Fold the edges of the dough over the peaches, pleating it as you go to create a rustic, free-form crust.
  6. Brush the folded crust with the beaten egg wash and sprinkle generously with additional granulated sugar. Dot the top of the peaches with the small pieces of butter.
  7. Bake for 30-35 minutes, or until the crust is golden brown and the peaches are tender and bubbly.
  8. Let the galette cool on the baking sheet for at least 15 minutes before serving. It’s delicious warm or at room temperature.

Notes

  • Use ripe, but firm, peaches for the best texture.
  • If your peaches are very juicy, you can increase the flour slightly to 1.5 tablespoons to absorb excess moisture.
  • Serve with a scoop of vanilla ice cream or a dollop of whipped cream.
