- 4-5 ripe peaches, peeled, pitted, and sliced
- 1/4 cup granulated sugar, plus extra for sprinkling
- 1 tablespoon all-purpose flour
- 1/2 teaspoon vanilla extract
- Pinch of ground cinnamon (optional)
- 1 tablespoon unsalted butter, cut into small pieces
- 1 egg, beaten (for egg wash)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- On a lightly floured surface, roll out the pie crust into a rough 12-inch circle. Transfer the dough to the prepared baking sheet.
- In a large bowl, gently toss the sliced peaches with 1/4 cup sugar, flour, vanilla extract, and cinnamon (if using).
- Arrange the peach mixture in the center of the rolled-out dough, leaving a 2-inch border around the edges.
- Fold the edges of the dough over the peaches, pleating it as you go to create a rustic, free-form crust.
- Brush the folded crust with the beaten egg wash and sprinkle generously with additional granulated sugar. Dot the top of the peaches with the small pieces of butter.
- Bake for 30-35 minutes, or until the crust is golden brown and the peaches are tender and bubbly.
- Let the galette cool on the baking sheet for at least 15 minutes before serving. It’s delicious warm or at room temperature.
Notes
- Use ripe, but firm, peaches for the best texture.
- If your peaches are very juicy, you can increase the flour slightly to 1.5 tablespoons to absorb excess moisture.
