A simple and delicious fresh cherry cobbler, perfect for a summer dessert.
Ingredients

- 3 cups fresh cherries, pitted
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon lemon juice
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 6 tablespoons cold unsalted butter, cut into cubes
- 1/2 cup milk
Instructions
- Preheat oven to 375°F (190°C).
- In a medium bowl, combine the pitted cherries, 1/2 cup sugar, cornstarch, and lemon juice. Toss gently to coat the cherries. Pour the cherry mixture into an 8×8 inch baking dish.
- In a separate medium bowl, whisk together the flour, 1/4 cup sugar, baking powder, and salt.
- Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Pour in the milk and stir until just combined. Do not overmix.
- Drop spoonfuls of the biscuit topping over the cherry mixture.
- Bake for 30-35 minutes, or until the topping is golden brown and the cherry filling is bubbly.
- Let cool slightly before serving.
Notes
- You can use frozen cherries, but thaw and drain them well before using.
- Serve warm with a scoop of vanilla ice cream or whipped cream.
