Ingredients

  • 2 tablespoons cornstarch
  • 1 teaspoon lemon juice
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 6 tablespoons cold unsalted butter, cut into cubes
  • 1/2 cup milk


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a medium bowl, combine the pitted cherries, 1/2 cup sugar, cornstarch, and lemon juice. Toss gently to coat the cherries. Pour the cherry mixture into an 8×8 inch baking dish.
  3. In a separate medium bowl, whisk together the flour, 1/4 cup sugar, baking powder, and salt.
  4. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  5. Pour in the milk and stir until just combined. Do not overmix.
  6. Drop spoonfuls of the biscuit topping over the cherry mixture.
  7. Bake for 30-35 minutes, or until the topping is golden brown and the cherry filling is bubbly.
  8. Let cool slightly before serving.

Notes

  • You can use frozen cherries, but thaw and drain them well before using.
  • Serve warm with a scoop of vanilla ice cream or whipped cream.
