- 4 cups fresh strawberries, hulled and halved
- 1 cup granulated sugar
- 3 tablespoons cornstarch
- 1/4 cup cold water
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
Instructions
- Arrange the halved strawberries in the pre-baked pie crust.
- In a medium saucepan, combine the sugar and cornstarch.
- Gradually whisk in the cold water until smooth.
- Add the lemon juice to the saucepan.
- Cook over medium heat, stirring constantly, until the mixture thickens and becomes clear.
- Remove from heat and stir in the vanilla extract.
- Pour the warm glaze evenly over the strawberries in the pie crust.
- Refrigerate for at least 2 hours, or until the glaze is set.
- Slice and serve chilled.
Notes
- For best results, chill the pie until the glaze is completely set before slicing.
