Ingredients

  • 2 medium zucchinis
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste


Instructions

  1. Wash and trim the ends of the zucchinis. Use a spiralizer or a vegetable peeler to create noodles from the zucchinis. Place the zucchini noodles on paper towels to absorb excess moisture.
  2. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant, being careful not to burn it.
  3. Add the zucchini noodles to the skillet and toss with the garlic oil. Cook for 2-3 minutes, or until the noodles are slightly tender but still have a slight bite (al dente). Avoid overcooking, as the noodles can become watery.
  4. Remove the skillet from the heat. Add the grated Parmesan cheese and chopped fresh parsley. Toss gently to combine.
  5. Season with salt and black pepper to taste.
  6. Serve immediately as a healthy and light meal or side dish.
