Description
A healthy and delicious alternative to pasta, made with zucchini noodles and a garlic parmesan sauce.
Ingredients

- 2 medium zucchinis
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- Wash and trim the ends of the zucchinis. Use a spiralizer or a vegetable peeler to create noodles from the zucchinis. Place the zucchini noodles on paper towels to absorb excess moisture.
- Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant, being careful not to burn it.
- Add the zucchini noodles to the skillet and toss with the garlic oil. Cook for 2-3 minutes, or until the noodles are slightly tender but still have a slight bite (al dente). Avoid overcooking, as the noodles can become watery.
- Remove the skillet from the heat. Add the grated Parmesan cheese and chopped fresh parsley. Toss gently to combine.
- Season with salt and black pepper to taste.
- Serve immediately as a healthy and light meal or side dish.
Notes
- For best results, do not overcook the zucchini noodles.
- You can add other vegetables like cherry tomatoes or spinach for extra flavor and nutrients.
- Top with grilled chicken, shrimp, or your favorite protein for a complete meal.
