- 6 cups sliced fresh peaches (about 6-8 medium peaches)

- 1/4 cup gluten-free all-purpose flour blend
- 1/2 cup almond flour
- 1/2 cup gluten-free rolled oats
- 1/2 cup packed light brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup cold unsalted butter, cut into cubes
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish.
- In a large bowl, combine the sliced peaches, granulated sugar, lemon juice, vanilla extract, and gluten-free all-purpose flour blend. Toss gently to coat the peaches evenly. Pour the peach mixture into the prepared baking dish.
- In a separate medium bowl, combine the almond flour, gluten-free rolled oats, brown sugar, cinnamon, nutmeg, and salt.
- Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
- Sprinkle the topping evenly over the peach mixture in the baking dish.
- Bake for 35-45 minutes, or until the topping is golden brown and the peach filling is bubbly.
- Let the crisp cool slightly before serving. Serve warm, perhaps with a scoop of dairy-free ice cream or whipped cream.

- You can use frozen peaches, but thaw them and drain off excess liquid before using.
