Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish.
  2. In a large bowl, combine the sliced peaches, granulated sugar, lemon juice, vanilla extract, and gluten-free all-purpose flour blend. Toss gently to coat the peaches evenly. Pour the peach mixture into the prepared baking dish.
  3. In a separate medium bowl, combine the almond flour, gluten-free rolled oats, brown sugar, cinnamon, nutmeg, and salt.
  4. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
