- 4 boneless, skinless chicken breasts
- 1 head romaine lettuce, chopped
- 1 cup croutons
- 1/2 cup grated Parmesan cheese
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Preheat grill to medium-high heat.
- In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper.
- Brush chicken breasts with some of the dressing.
- Grill chicken for 6-8 minutes per side, or until cooked through. Let rest for a few minutes, then slice.
- In a large bowl, combine chopped romaine lettuce, croutons, and Parmesan cheese.
- Add remaining dressing to the salad and toss to coat.
- Top salad with sliced grilled chicken.
- Serve immediately.
