Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 head romaine lettuce, chopped
  • 1 cup croutons
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste


Instructions

  1. Preheat grill to medium-high heat.
  2. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper.
  3. Brush chicken breasts with some of the dressing.
  4. Grill chicken for 6-8 minutes per side, or until cooked through. Let rest for a few minutes, then slice.
  5. In a large bowl, combine chopped romaine lettuce, croutons, and Parmesan cheese.
  6. Add remaining dressing to the salad and toss to coat.
  7. Top salad with sliced grilled chicken.
  8. Serve immediately.
