  • 2 ripe but firm peaches, halved and pitted
  • 8 ounces fresh burrata cheese
  • 1/4 cup fresh basil leaves, torn or thinly sliced
  • 2 tablespoons olive oil, plus more for grilling
  • 1 tablespoon balsamic glaze
  • Pinch of salt
  • Pinch of black pepper


Instructions

  1. Preheat your grill or grill pan to medium-high heat. Lightly brush the cut sides of the peaches with olive oil.
  2. Place the peaches cut-side down on the hot grill. Grill for 3-5 minutes, or until grill marks appear and the peaches soften slightly but still hold their shape. Remove from the grill and let cool slightly.
  3. While the peaches cool, tear or slice the burrata into pieces and arrange them on a serving platter or individual plates.
  4. Slice the grilled peaches into wedges and artfully arrange them around the burrata.
  5. Scatter the fresh basil leaves over the peaches and burrata.
  6. Drizzle the olive oil and balsamic glaze generously over the entire salad.
  7. Season with a pinch of salt and black pepper to taste.
  8. Serve immediately and enjoy this fresh and flavorful salad.
