Ingredients
Scale
- 2 ripe but firm peaches, halved and pitted
- 8 ounces fresh burrata cheese
- 1/4 cup fresh basil leaves, torn or thinly sliced
- 2 tablespoons olive oil, plus more for grilling
- 1 tablespoon balsamic glaze
- Pinch of salt
- Pinch of black pepper
Instructions
- Preheat your grill or grill pan to medium-high heat. Lightly brush the cut sides of the peaches with olive oil.
- Place the peaches cut-side down on the hot grill. Grill for 3-5 minutes, or until grill marks appear and the peaches soften slightly but still hold their shape. Remove from the grill and let cool slightly.
- While the peaches cool, tear or slice the burrata into pieces and arrange them on a serving platter or individual plates.
- Slice the grilled peaches into wedges and artfully arrange them around the burrata.
- Scatter the fresh basil leaves over the peaches and burrata.
- Drizzle the olive oil and balsamic glaze generously over the entire salad.
- Season with a pinch of salt and black pepper to taste.
- Serve immediately and enjoy this fresh and flavorful salad.
Notes
- Choose peaches that are ripe but still firm to ensure they hold up well on the grill.
- You can prepare the peaches ahead of time and store them in the refrigerator, then assemble the salad just before serving.
- For an extra touch, add a sprinkle of toasted pistachios or pecans for crunch.
