- 4 ripe peaches, halved and pitted
- 1 tablespoon melted unsalted butter or coconut oil
- 1/4 cup mascarpone cheese, softened
- 2 tablespoons honey, plus more for drizzling
- 1/2 teaspoon vanilla extract
- Optional: fresh mint leaves or chopped nuts for garnish
Instructions
- Preheat your grill to medium heat.
- Brush the cut sides of the peaches with melted butter or coconut oil.
- Place the peaches cut-side down on the grill. Grill for 4-6 minutes, or until softened and lightly charred.
- While the peaches are grilling, in a small bowl, whisk together the softened mascarpone cheese, 2 tablespoons of honey, and vanilla extract until smooth.
- Remove the grilled peaches from the grill.
- Spoon the honey mascarpone mixture into the center of each grilled peach half.
- Drizzle with additional honey if desired.
- Garnish with fresh mint leaves or chopped nuts, if using. Serve immediately.

- Choose ripe but firm peaches for the best grilling results.
- Adjust grilling time based on the ripeness of your peaches and the heat of your grill.
- Mascarpone cheese is a soft Italian cream cheese. You can substitute with cream cheese softened to room temperature.
