Ingredients

  • 4 ripe peaches, halved and pitted
  • 1 tablespoon melted unsalted butter or coconut oil
  • 1/4 cup mascarpone cheese, softened
  • 2 tablespoons honey, plus more for drizzling
  • 1/2 teaspoon vanilla extract
  • Optional: fresh mint leaves or chopped nuts for garnish


Instructions

  1. Preheat your grill to medium heat.
  2. Brush the cut sides of the peaches with melted butter or coconut oil.
  3. Place the peaches cut-side down on the grill. Grill for 4-6 minutes, or until softened and lightly charred.
  4. While the peaches are grilling, in a small bowl, whisk together the softened mascarpone cheese, 2 tablespoons of honey, and vanilla extract until smooth.
  5. Remove the grilled peaches from the grill.
  6. Spoon the honey mascarpone mixture into the center of each grilled peach half.
  7. Drizzle with additional honey if desired.
  8. Garnish with fresh mint leaves or chopped nuts, if using. Serve immediately.
