Ingredients

  • 4 large portobello mushrooms, stems removed
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 burger buns
  • Optional toppings: lettuce, tomato, onion, cheese, avocado, pickles


Instructions

  1. Preheat your grill to medium heat.
  2. In a small bowl, whisk together the olive oil, minced garlic, balsamic vinegar, dried thyme, salt, and pepper.
  3. Brush both sides of the portobello mushrooms with the marinade.
  4. Place the marinated mushrooms on the preheated grill.
  5. Grill for 5-7 minutes per side, or until tender and slightly browned.
  6. While the mushrooms are grilling, lightly toast the burger buns on the grill if desired.
  7. Assemble the burgers by placing a grilled portobello mushroom on each bun.
  8. Add your favorite toppings.
  9. Serve immediately.

Notes

  • For an extra smoky flavor, add a pinch of smoked paprika to the marinade.
  • These burgers are delicious served with sweet potato fries or a fresh salad.
