Ingredients

  • 2 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Worcestershire sauce
  • 1/2 cup extra virgin olive oil
  • 1/4 cup grated Parmesan cheese
  • Salt and freshly ground black pepper to taste


Instructions

  1. In a medium bowl, whisk together the egg yolks, minced garlic, Dijon mustard, lemon juice, and Worcestershire sauce until well combined.
  2. Slowly drizzle in the extra virgin olive oil while continuously whisking. This will emulsify the dressing and make it thick and creamy.
  3. Stir in the grated Parmesan cheese.
  4. Season with salt and freshly ground black pepper to taste.
  5. Taste and adjust seasonings as needed. Add more lemon juice for tanginess or more Parmesan for cheesiness.
