- 2 large egg yolks
- 2 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh lemon juice
- 1 teaspoon Worcestershire sauce
- 1/2 cup extra virgin olive oil
- 1/4 cup grated Parmesan cheese
- Salt and freshly ground black pepper to taste
Instructions
- In a medium bowl, whisk together the egg yolks, minced garlic, Dijon mustard, lemon juice, and Worcestershire sauce until well combined.
- Slowly drizzle in the extra virgin olive oil while continuously whisking. This will emulsify the dressing and make it thick and creamy.
- Stir in the grated Parmesan cheese.
- Season with salt and freshly ground black pepper to taste.
- Taste and adjust seasonings as needed. Add more lemon juice for tanginess or more Parmesan for cheesiness.
- Use immediately or store in an airtight container in the refrigerator for up to 3-4 days.
Notes
- For a thicker dressing, use slightly less olive oil.
- For a thinner dressing, add a splash of water or milk.
