Description

This Loaded Baked Potato Salad is a comforting dish featuring tender potatoes, crispy bacon, and sharp cheddar cheese, all tossed in a creamy dressing. It is perfect for potlucks, picnics, or a satisfying side dish.

  • 2 lbs baking potatoes
  • 8 slices bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 tablespoons chopped chives
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and dry the potatoes. Pierce each potato several times with a fork.
  3. Bake potatoes for 45-60 minutes, or until tender when pierced with a fork. Let cool slightly.
  4. While potatoes are baking, cook bacon in a skillet over medium heat until crispy. Drain on paper towels and crumble.
  5. Once potatoes are cool enough to handle, cut them into bite-sized chunks.
  6. In a large bowl, combine sour cream, mayonnaise, chives, apple cider vinegar, salt, and pepper.
  7. Add the potato chunks, crumbled bacon, and shredded cheddar cheese to the bowl with the dressing.
  8. Gently stir to coat everything evenly.
  9. Serve immediately or chill for at least 30 minutes to allow flavors to meld.
