Instructions
- In a bowl, whisk together the chia seeds, coconut milk, maple syrup (if using), and pinch of salt.
- Let the mixture sit for 5-10 minutes, then whisk again to break up any clumps.
- Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, until thickened.
- Stir the pudding and spoon it into serving glasses or bowls.
- Top with diced fresh mango.
