Description

This Mediterranean tuna pasta salad combines tender pasta with flavorful tuna, briny olives, salty feta, and sweet cherry tomatoes, all tossed in a simple olive oil dressing for a light and satisfying meal.


Ingredients

  • 8 ounces (about 2 cups) short pasta (such as rotini or penne)
  • 2 (5-ounce) cans tuna in olive oil, drained
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1/4 cup chopped fresh parsley
  • Salt and black pepper to taste


Instructions

  1. Cook pasta according to package directions until al dente. Drain and rinse with cold water to cool.
  2. In a large bowl, combine the cooled pasta, drained tuna, halved cherry tomatoes, and halved Kalamata olives.
  3. Gently stir in the crumbled feta cheese.
  4. In a small bowl, whisk together the extra virgin olive oil and fresh lemon juice.
