- 2 (5-ounce) cans tuna in olive oil, drained
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and halved
- 1/4 cup crumbled feta cheese
- 2 tablespoons extra virgin olive oil
- 1 tablespoon fresh lemon juice
- 1/4 cup chopped fresh parsley
- Salt and black pepper to taste
Instructions
- Cook pasta according to package directions until al dente. Drain and rinse with cold water to cool.
- In a large bowl, combine the cooled pasta, drained tuna, halved cherry tomatoes, and halved Kalamata olives.
- Gently stir in the crumbled feta cheese.
- In a small bowl, whisk together the extra virgin olive oil and fresh lemon juice.
- Pour the dressing over the pasta mixture and toss to coat evenly.
- Add the chopped fresh parsley and stir to combine.
- Season with salt and black pepper to taste.
- Serve immediately or chill in the refrigerator for at least 30 minutes for flavors to meld.
