  • 1 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/2 cup chopped pecans
  • 1/2 cup (1 stick) unsalted butter, cold and cut into cubes
  • 1/4 teaspoon salt
  • 1/4 cup ice water
  • Vanilla ice cream or whipped cream, for serving (optional)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the sliced peaches, granulated sugar, 1/4 cup brown sugar, cinnamon, nutmeg, and lemon juice. Toss gently to coat the peaches.
  3. Pour the peach mixture into a 9×13 inch baking dish.
  4. In a separate medium bowl, whisk together the flour, 1/2 cup brown sugar, chopped pecans, and salt for the topping.
  5. Add the cold butter cubes to the flour mixture. Use a pastry blender or your fingertips to cut the butter into the flour until the mixture resembles coarse crumbs.
  6. Gradually add the ice water, a tablespoon at a time, mixing until the dough just comes together. Do not overmix.
  7. Crumble the pecan topping evenly over the peach mixture in the baking dish.
  8. Bake for 45-55 minutes, or until the topping is golden brown and the peach filling is bubbly.
  9. Let the cobbler cool for at least 15 minutes before serving.
  10. Serve warm, with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
