- 1/2 cup granulated sugar
- 1/4 cup packed light brown sugar

- 1 cup all-purpose flour
- 1/2 cup packed light brown sugar
- 1/2 cup chopped pecans
- 1/2 cup (1 stick) unsalted butter, cold and cut into cubes
- 1/4 teaspoon salt
- 1/4 cup ice water
- Vanilla ice cream or whipped cream, for serving (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the sliced peaches, granulated sugar, 1/4 cup brown sugar, cinnamon, nutmeg, and lemon juice. Toss gently to coat the peaches.
- Pour the peach mixture into a 9×13 inch baking dish.
- In a separate medium bowl, whisk together the flour, 1/2 cup brown sugar, chopped pecans, and salt for the topping.
- Add the cold butter cubes to the flour mixture. Use a pastry blender or your fingertips to cut the butter into the flour until the mixture resembles coarse crumbs.
- Gradually add the ice water, a tablespoon at a time, mixing until the dough just comes together. Do not overmix.
- Crumble the pecan topping evenly over the peach mixture in the baking dish.
- Bake for 45-55 minutes, or until the topping is golden brown and the peach filling is bubbly.
- Let the cobbler cool for at least 15 minutes before serving.
- Serve warm, with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
Notes
- Use ripe, fresh peaches for the best flavor and texture.
- If fresh peaches are not available, you can use frozen sliced peaches. Thaw them first and drain any excess liquid.
- Do not overwork the topping dough, as this can make it tough.
