Instructions
- Pat chicken thighs dry with paper towels. Season both sides with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken thighs, skin-side down, and cook for 8-10 minutes, until the skin is golden brown and crispy.
- Flip chicken thighs and cook for another 5-7 minutes, or until browned on the other side.
- While the chicken cooks, whisk together peach preserves, apple cider vinegar, dijon mustard, minced garlic, and dried thyme in a small bowl to create the glaze.
- Pour the peach glaze over the chicken in the skillet. Reduce heat to medium-low, cover, and simmer for 15-20 minutes, or until chicken is cooked through and the internal temperature reaches 165°F (74°C).
- Remove lid and increase heat to medium. Cook for an additional 5-7 minutes, spooning the glaze over the chicken occasionally, until the sauce has thickened and caramelized.
- Serve hot with your favorite sides.
