- 1/4 cup peach schnapps or brandy (optional, for Sangria)
- 2 tablespoons simple syrup (or to taste)

Instructions
- Peel and slice the peaches.
- For Sangria: In a large pitcher, combine sliced peaches, white wine, peach schnapps (if using), and simple syrup. Stir gently.
- For Bellini: In a blender, combine sliced peaches and simple syrup. Blend until smooth. Strain if desired for a smoother consistency.
- Chill the mixture for at least 1 hour to allow flavors to meld.
- To serve Sangria: Fill glasses with ice, pour in the sangria, and garnish with fresh mint.
- To serve Bellini: Pour the peach puree into champagne flutes, then top with chilled Prosecco. Garnish with a peach slice or mint.
