Description

A simple no-bake S’mores Icebox Cake perfect for summer gatherings. This dessert layers graham crackers, a light and fluffy marshmallow cream, and chocolate, creating a delightful treat reminiscent of classic s’mores.


Ingredients

  • 1 ½ cups heavy cream
  • 1 (7 ounce) jar marshmallow cream
  • 1 teaspoon vanilla extract
  • 1 (14.4 ounce) box graham crackers
  • 1 cup chocolate chips (milk or semi-sweet)
  • 2 tablespoons butter


Instructions

  1. In a large bowl, whip the heavy cream until stiff peaks form.
  2. Gently fold in the marshmallow cream and vanilla extract until just combined.
  3. In a microwave-safe bowl, melt the chocolate chips and butter together, stirring until smooth. Let cool slightly.
  4. Arrange a single layer of graham crackers in the bottom of a 9×13 inch baking dish, breaking them as needed to fit.
  5. Spread a third of the marshmallow cream mixture evenly over the graham crackers.
  6. Drizzle a third of the melted chocolate over the marshmallow cream layer.
  7. Repeat the layers: graham crackers, marshmallow cream, chocolate.
  8. Add a final layer of graham crackers, the remaining marshmallow cream, and the remaining melted chocolate.
  9. Cover the dish and refrigerate for at least 4 hours, or preferably overnight, to allow the graham crackers to soften.
  10. Slice and serve chilled.
