Description
A simple no-bake S’mores Icebox Cake perfect for summer gatherings. This dessert layers graham crackers, a light and fluffy marshmallow cream, and chocolate, creating a delightful treat reminiscent of classic s’mores.

- 1 ½ cups heavy cream
- 1 (7 ounce) jar marshmallow cream
- 1 teaspoon vanilla extract
- 1 (14.4 ounce) box graham crackers
- 1 cup chocolate chips (milk or semi-sweet)
- 2 tablespoons butter
Instructions
- In a large bowl, whip the heavy cream until stiff peaks form.
- Gently fold in the marshmallow cream and vanilla extract until just combined.
- In a microwave-safe bowl, melt the chocolate chips and butter together, stirring until smooth. Let cool slightly.
- Arrange a single layer of graham crackers in the bottom of a 9×13 inch baking dish, breaking them as needed to fit.
- Spread a third of the marshmallow cream mixture evenly over the graham crackers.
- Drizzle a third of the melted chocolate over the marshmallow cream layer.
- Repeat the layers: graham crackers, marshmallow cream, chocolate.
- Add a final layer of graham crackers, the remaining marshmallow cream, and the remaining melted chocolate.
- Cover the dish and refrigerate for at least 4 hours, or preferably overnight, to allow the graham crackers to soften.
- Slice and serve chilled.
Notes
- For extra flavor, you can lightly toast the graham crackers before assembling.
- Add mini marshmallows on top before serving for a fun touch.
