- 1 cup fresh or frozen blueberries
- 1/2 cup fresh lemon juice
- 1/4 cup granulated sugar (or to taste)
- 4 cups sparkling water or club soda
- Fresh mint leaves for garnish (optional)
- Lemon slices for garnish (optional)
Instructions
- In a small saucepan, combine the blueberries, sugar, and 1/4 cup of water.
- Bring to a simmer over medium heat, stirring occasionally, until the blueberries burst and the sugar dissolves. This should take about 5-7 minutes.
- Remove from heat and let the blueberry mixture cool slightly.
- Strain the blueberry mixture through a fine-mesh sieve into a pitcher, pressing the solids to extract as much liquid as possible. Discard the solids.
- Add the fresh lemon juice to the pitcher with the blueberry syrup. Stir to combine.
- Add the sparkling water or club soda to the pitcher. Stir gently.
- Fill glasses with ice. Pour the sparkling blueberry lemonade over the ice.
- Garnish with fresh mint leaves and lemon slices, if desired.
- Serve immediately.

- For a smoother drink, blend the cooled blueberry mixture before straining.
