  • 2 cups sliced fresh strawberries
  • 1/2 cup sliced almonds or pecans
  • 1/4 cup crumbled feta or goat cheese (optional)
  • 1/4 cup red onion, thinly sliced (optional)
  • For the Vinaigrette:
  • 1 cup fresh strawberries, hulled and quartered
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste


Instructions

  1. Prepare the vinaigrette: Combine the quartered strawberries, olive oil, balsamic vinegar, honey or maple syrup, Dijon mustard, salt, and pepper in a blender or food processor. Blend until smooth. Taste and adjust seasoning as needed.
  2. In a large bowl, combine the fresh spinach, sliced strawberries, sliced almonds or pecans, crumbled cheese (if using), and sliced red onion (if using).
  3. Drizzle the desired amount of strawberry vinaigrette over the salad ingredients.
  4. Gently toss the salad to coat everything evenly with the dressing.
  5. Serve immediately.
