Description
Make these easy sweet corn fritters. They are a perfect summer side dish.

- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 ½ cups fresh or frozen corn kernels, thawed and drained
- Vegetable oil for frying
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the milk, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Gently fold in the corn kernels.
- Heat about ½ inch of vegetable oil in a large skillet over medium heat.
- Drop spoonfuls of batter into the hot oil, being careful not to overcrowd the pan.
- Cook for 2-3 minutes per side, or until golden brown and cooked through.
- Remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.
- Serve warm.
Notes
- For extra flavor, you can add chopped chives or a pinch of cayenne pepper to the batter.
- Frozen corn works well in this recipe; just make sure it is fully thawed and drained.
- Adjust cooking time based on the size of your fritters.
