Description

Make these easy sweet corn fritters. They are a perfect summer side dish.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 ½ cups fresh or frozen corn kernels, thawed and drained
  • Vegetable oil for frying


Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk together the milk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  4. Gently fold in the corn kernels.
  5. Heat about ½ inch of vegetable oil in a large skillet over medium heat.
  6. Drop spoonfuls of batter into the hot oil, being careful not to overcrowd the pan.
  7. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  8. Remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.
  9. Serve warm.

Notes

  • For extra flavor, you can add chopped chives or a pinch of cayenne pepper to the batter.
  • Frozen corn works well in this recipe; just make sure it is fully thawed and drained.
  • Adjust cooking time based on the size of your fritters.
