Description

Flavorful grilled chicken skewers marinated in Thai spices, served with a rich and creamy peanut sauce.


Ingredients

  • 1.5 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1/4 cup soy sauce
  • 2 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 1 tablespoon brown sugar
  • 1 tablespoon red curry paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/4 cup creamy peanut butter
  • 2 tablespoons coconut milk
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon honey or maple syrup
  • 1 clove garlic, minced
  • 1/2 teaspoon grated fresh ginger
  • Water, as needed to thin sauce
  • Wooden or metal skewers


Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a large bowl, whisk together the soy sauce, fish sauce, lime juice, brown sugar, red curry paste, cumin, coriander, turmeric, and cayenne pepper (if using).
  3. Add the chicken pieces to the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
  4. While the chicken is marinating, prepare the peanut sauce. In a small bowl, whisk together the peanut butter, coconut milk, soy sauce, lime juice, honey or maple syrup, minced garlic, and grated ginger. Add water, 1 tablespoon at a time, until the sauce reaches your desired consistency. Set aside.
  5. Preheat your grill to medium-high heat.
  6. Thread the marinated chicken pieces onto the skewers. Discard any remaining marinade.
  7. Lightly oil the grill grates. Place the skewers on the grill and cook for 6-8 minutes, flipping halfway through, until the chicken is cooked through and has nice grill marks.
  8. Serve the chicken satay skewers hot with the prepared peanut sauce for dipping.

Notes

  • You can substitute chicken breast for thighs, but thighs tend to stay juicier.
  • Adjust the amount of cayenne pepper to control the level of heat.
  • The peanut sauce can be made ahead of time and stored in the refrigerator for up to 3 days. You may need to thin it with a little water before serving.
  • If you don’t have a grill, you can cook the satay skewers under a broiler or in a grill pan on the stovetop.
