Description

A refreshing and flavorful cold noodle salad with a creamy peanut dressing, inspired by Thai cuisine.


Ingredients

  • 8 ounces dried linguine or other preferred pasta
  • 1 cup shredded carrots
  • 1 cup shredded purple cabbage
  • 1/2 cup chopped red bell pepper
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped roasted peanuts, for garnish (optional)
  • 2 tablespoons sesame seeds, for garnish (optional)
  • For the Peanut Dressing:
  • 1/2 cup smooth peanut butter
  • 1/4 cup soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon sesame oil
  • 1 clove garlic, minced
  • 1/2 teaspoon grated fresh ginger
  • 2-4 tablespoons hot water, to thin


Instructions

  1. Cook the pasta according to package directions. Drain and rinse with cold water until completely cool.
  2. While the pasta is cooking, prepare the peanut dressing by whisking together the peanut butter, soy sauce, rice vinegar, honey, sesame oil, minced garlic, and grated ginger in a medium bowl.
  3. Add hot water, 1 tablespoon at a time, whisking until the dressing reaches your desired consistency. It should be pourable but still creamy.
  4. In a large bowl, combine the cooled pasta, shredded carrots, shredded purple cabbage, chopped red bell pepper, chopped green onions, and chopped cilantro.
  5. Pour the peanut dressing over the pasta and vegetables. Toss gently to coat everything evenly.
  6. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  7. Before serving, toss again. Garnish with chopped peanuts and sesame seeds, if desired.

  • You can adjust the vegetables based on your preference.
  • Add cooked chicken, shrimp, or tofu for added protein.
  • The salad can be made ahead of time and stored in the refrigerator for up to 2-3 days.
