Description

This simple Mediterranean-inspired tuna pasta dish features fresh tomatoes, fragrant basil, and rich olive oil for a light and flavorful meal.


Ingredients

  • 8 ounces pasta (such as penne or fusilli)
  • 1 (5 ounce) can tuna in olive oil, drained
  • 1 pint cherry tomatoes, halved
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 clove garlic, minced (optional)
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Cook pasta according to package directions until al dente. Drain and set aside.
  2. While pasta cooks, in a large bowl, combine the drained tuna, halved cherry tomatoes, chopped basil, and olive oil. If using, add minced garlic.
  3. Season with salt and black pepper to taste.
  4. Add the cooked and drained pasta to the bowl with the tuna mixture. Toss gently to combine.
  5. Serve immediately and enjoy.

Notes

  • For extra flavor, lightly crush some of the cherry tomatoes before adding them to the mixture.
  • A squeeze of fresh lemon juice can brighten the flavors even more.
  • This dish is also delicious served cold as a pasta salad.
