- 1/2 teaspoon vanilla extract
- 1 ripe peach, peeled and diced
- Pinch of salt
- Optional toppings: fresh berries, shredded coconut, chopped nuts, granola
Instructions
- In a medium bowl or jar, combine the coconut milk, chia seeds, maple syrup (or agave nectar), vanilla extract, and a pinch of salt.
- Whisk or stir well to combine, making sure there are no clumps of chia seeds.
- Add the diced peach to the mixture and stir gently.
- Cover the bowl or jar and refrigerate for at least 4 hours, or preferably overnight, until the pudding has thickened.
- Stir the pudding before serving. If it’s too thick, add a splash of water or more coconut milk until it reaches your desired consistency.
- Serve chilled with your favorite optional toppings.
