  • 2 cans (5 ounces each) tuna in olive oil, drained
  • 4 cloves garlic, minced
  • 1/2 cup fresh lemon juice (from about 2-3 lemons)
  • 1/4 cup extra virgin olive oil
  • 1/4 cup chopped fresh parsley
  • Salt and black pepper to taste
  • Red pepper flakes (optional, for a little heat)


Instructions

  1. Cook the pasta according to package directions until al dente. Reserve 1/2 cup of the pasta water before draining.
  2. While the pasta cooks, prepare the sauce. In a large bowl, combine the drained tuna, minced garlic, fresh lemon juice, and olive oil.
  3. Add the cooked and drained pasta to the bowl with the tuna mixture.
  4. Stir in the chopped fresh parsley.
  5. Add a few tablespoons of the reserved pasta water, a little at a time, until the sauce reaches your desired consistency. This helps to emulsify the sauce and coat the pasta.
  6. Season with salt and black pepper to taste. Add red pepper flakes if you like a little heat.
  7. Toss everything together until well combined.
  8. Serve immediately and enjoy your delicious lemon garlic tuna pasta.
